+ Lazy Vegan Dinner +

I’m obsessed with Trader Joe’s. They have an awesome frozen section that doesn’t actually suck. Last night I made this super easy dinner and all ingredients are from Trader Joe’s.

I got frozen jasmine rice (the box that had three bags), Thai vegetable potstickers, frozen petite peas, fresh micro greens, broccolini, and lime.

+ I already had black sesame seeds & lime at home.

First, I made the potstickers on a pan, following the directions on the bag. After 5 minutes, I put the jasmine rice in the microwave for 3. I put the frozen peas in the microwave for about a minute.

To assemble, I put the rice in a bowl with a dash of rice vinegar, black sesame seeds on top. Potstickers, peas, broccolini, and microgreens over rice with lime juice over everything for a dressing.
Boom. Simple. Delicious.
