+ vegan : what I eat in a day +

Breakfast: 4 frozen bananas blended with almond milk, topped with raw buckwheat groats and cocao nibs. Green ice tea and water!

Snack: My favorite chips and salsa! Casa Sanchez medium and Tostitos scoops.

Lunch: 2 Avocado, cucumber, and lemon rolls. My dad got them for me!  🙂 I like to put the wasabi straight on the roll because I like them SPICY! Bomb.

Snack: Peach! 🍑 (From the farmer’s market)

Another snack: Snickerdoodle (the best kind) protein cookie! These are SOOO good! My boyfriend and I love them.

Dinner: Leftover salad from last night’s dinner date with my man. I had a red quinoa salad with kale, cilantro, cherry tomatoes, pumpkins seeds, cauliflower, pomegranate seeds, brussel sprouts, blueberries, and red beets. It’s not my favorite, but I didn’t want to waste it!

Dinner: 1 sweet potato, peeled. Added paprika, onion powder, garlic powder, and a little salt. Oil free! 🙂

Please keep in mind that I was in more of a snack mood today and this is not what I eat everyday. I change up what I eat on the daily to cater to what my body craves! In no way am I a health coach, nutritionist, or anything like that. I just enjoy food and sharing it to show how easy a vegan diet is!

With that being said, thank you so much for reading what I ate today as a vegan college student here at healthy&handmade! What do you like to eat in a full day? Always remember to eat yo veggies, think positive, and love yourself!
